The Pohutakawa tree (Metrosideros excelsa) is a coastal evergreen tree, native to NZ, that has a stunning crimson flower present for only a few weeks over summer! The prolific flowering in December means it is often referred to as the New Zealand Christmas tree.
This is a beautiful pale honey with unique, bright floral tones and a salty finish - a true taste of summer at the beach in the Far North!
The nectar has historically been used for sore throats, the inner bark is utilised in Rongoa Maori, and the timber is hardy and very versatile. One tree of significance is located at Te Rerenga Waira (Cape Reinga) and marks the place where the spirits of the departed leave Aotearoa to return to Hawaiki.
